How to Brew

Use one heaped tablespoon of medium-ground coffee per cup. Bring water to just off the boil (around 92–96°C). Pour a small amount over the grounds first to allow them to bloom for 30 seconds, then slowly pour the remainder in a steady circular motion. Allow the coffee to drip through fully before serving.
